My grandchildren ask for these chicken tenders over the ones breaded with flour, so I give them five hearts! They are easy to cook in a standard oven or the microwave. Oven baking results in a more crispy “tender,” while the microwaved chicken is softer but just as great tasting.

Good friends gave me several loaves of Udi’s Gluten Free breads as a housewarming when we moved into our new home recently. What a thoughtful gift for a person who has to eat gluten free! They also gave me some yummy cherry preserves which goes great with the toasted bread.

To cut costs on my grocery bill, I save the end pieces of the loaves of bread. Most GF breads in the supermarket are found frozen, so I keep the scrap pieces of bread in a separate freezer bag. Later, I thaw them out and crumble the pieces for use in meatloaf or toss them in a food processor to make bread crumbs for coating homemade cutlets.
Gluten free food is expensive, but prices are going down as more and more people turn to gluten free foods.
